Dunk and potato salad

We already dunked in the lake. Next up: making a nice bowl of potato salad.

That’s it. That’s July 4 for this household which is in the throes of grief for what our nation has become. We’re also part of the pack that’s worried about what will have to be done going forward to ensure accountability, to build guardrails, and to restore order and justice.

Is it too much to ask that decency and kindness step into our political arena?

Closer to home, a turkey family visited yesterday (see below).

And this happened. More than 18,000 likes? For point of comparison, most of my posts on threads get between zero and ten (and I don’t really care, that’s not the point).

The response to this somewhat artless statement tells me that people are beyond disgusted with the Supreme Court and angry about the McConnell fuckery that landed us here.

With McConnell in the hospital, we now wait to see how the ridiculous rule imposed by the Kentucky legislature plays out. Is it even constitutional? The second a democratic a governor was elected the Republican-ruled legislature stripped power from the governor, restricting who he can appoint as temporary successor to a retired or dead Senator.

I do not apologize for my gallows humor: the speculation that McConnell is already dead is one of the more entertaining subjects on threads right now.

    Most of the Republicans are OLD and ready to die… been that way since I stayed up late hoping Nixon didn’t get elected He did….

    Dee~ Boy…Finney-boy sure looked like he enjoyed his time in the water! Love the pic with the landing ball 🙂
    As I was scrolling down – a turkey family came to visit…I wondered how you knew the family at the picnic table was from Turkey?!! Another second and I saw the real turkey family!! 😂 I miss seeing the ones that have lived near here.
    As for our country, I have no words.

    when ever you have one of your fabric construction on the site- I look and look and WONDER yet again why I can’t be that loose and joyful with fabric…….. I must be a thousand percent Virgo …..coloring inside the lines….

      But precise constructions can offer up a different kind of elegance and beauty you know. And I can’t do them. Sometimes I long to be able to piece carefully and it just doesn’t work out.

    I’m still thinking about your potato salad, something I always made for the 4th. I had planned on just having some leftover pasta for my meal but inspired by you, yesterday I made a small batch of potato salad for myself, added the usual celery and onion but this time it was red onion and I had some Kalamata olives, so I sliced them and added some of their brine, threw in a handful of chopped fresh parsley, some Dijon, a bit of mayo, sea salt, a sprinkle of cracked black pepper and had it with a delicious homemade chicken leftover.

    When my daughters were recently here, they insisted on doing some batch cooking for their dear old Mom, thinking that in my dotage, I might not be eating regular meals…! Shelley made a Provencal chicken dish, chicken thighs, marinated in olive oil and herbs de Provence and she slipped goat cheese under the skin. Chicken baked for about 45 minutes, absolutely scrumptious. Leftovers were frozen in individual containers, enough for three meals. A bit of change from my usual fried chicken and potato salad served on the 4th. In the days when we had something to celebrate about America, I always made the flag cake a rectangular cake, (always Devil’s food, Rich’s favorite). The top was slathered in homemade whipping cream, blueberries and sliced strawberries to resemble the stars and stripes. I miss that cake because, given the present regime, I cannot bring myself to make it.

      That potato salad sounds delicious. I love the idea of Kalamata olives and their brine! I used onions and celery too. Also some diced green pepper. My dressing is half mayo, half Greek yogurt, and a splash of buttermilk. Squeeze of lemon, truvia, salt until it tastes just right. Also some rice wine vinegar. I find lemon alone usually isn’t enough. Last night I added some fresh dill because I had some, but usually I add parsley like you did.

      How sweet for the girls to care for you in that way! I’ve made whole birds with a goat cheese/herb paste under the skin, so I know how good that is. How is your appetite, by the way?

      We live near a big open field (up behind the school) and typically fireworks are set off up there. Last night was no exception. I, like you, did not feel celebratory.

        My appetite is touch and go. I’ve never been a big eater but lately, I seem to enjoy just not having to make a big production for dinner, sometimes having only a salad or sandwich. . In this intense heat, ice cream has often been my dinner as well!

        My daughter Erika, Adrian, Rowena and Spencer arrive this afternoon so I have made a light, delicious Sopa de Elote, corn soup for dinner. Eating soup in hot weather is actually a good thing. plus it is my tradition and it is always requested for the first night when family arrive.. Since we are all chili heads, we will also have a a New Mexican green chile cheese cornbread that I baked plus guacamole and chips as well. This soup is lovely because you put a T of diced green chili in the bottom of the bowl , along with a handful of shredded cheese. The cheese varies, depending upon my mood. Tonight it will be pepper jack cheese. Then the soup is ladled into the bowl, melting the cheese. It is so good. On Tues., we leave for Taos for a few days where we will be met with monsoon rains and I am actually looking forward to wandering a bit in the rain in Taos. I’m also looking forward to dining out, a sure way to increase my appetite!

          I know what you mean about keeping it simple. When Ken used to travel I’d often have breakfast food for dinner. It’s so hot here too that ice cream is often the main dish, tho I usually make myself have a salad and some kind of little protein first.

          I did not think I was hungry but reading about that chili has made me so! OMG it sounds so good.

          I’ll want to hear about your trip to Taos.
