Using packaged beef stock for this onion soup makes it ridiculously easy to throw together. It was so easy and so delicious, in fact, that it made me think that there should be a ratio of deliciousness to effort for recipes. This one would be off the charts.
EASY ONION SOUP
Sauté two onions (sliced in half moons)
add salt, pepper, thyme and
one box of beef stock.
Floating cheese toast nice but not necessary.

Onion soup … perfect for this time of year. I confess to using homemade chicken broth (which I always have in the freezer, so it too provides the ease of just opening a container) … and a splash of Marsala or Vin Santo, because that’s easy, too.
I always use homemade chicken stock when I have it (I think that’s part of why the beef stock was so tasty. I don’t usually use it). For me chicken stock gets made about weekly and I keep it in the fridge for all kinds of things – not just soups. I have GOT to get in the habit of freezing some now and then. The jazz of alcohol sounds delicious. Thanks for the tip!
There is a place that I grew up going to, called Hamburger Hamlet…the best onion soup ever! I’ve never found another that satisfies. Reading this makes me want to go get some!
